Calina's Conserves
Jams full of Scottish fruit, traditional crofters Chutneys and sparkling Jellies
STANDARD RANGE
Strawberry Jam - contains whole fruits and no artificial additives or flavours - just Highland sun ripened fruit and sugar with a hint of lemon juice to help the set.
Raspberry Jam - maybe the most flavoursome jam you will ever taste…….. using the wonderful Scottish "Glen" berries.
Rhubarb & Ginger Jam - this was one of the mainstay preserves in most Highland homes for centuries as rhubarb grows very well and freely in our "damp" climate. The preserve is delicately flavoured with ginger and a hint of orange and, for those committed "gingerholics", has bits of preserved ginger for added "bite".
Customer comments: "great with ice cream…" "wonderful with rice pudding"
" …..with custard - the ultimate comfort food!"
Blackcurrant Jam - these succulent berries are widely grown in our cool climate. A much sought source of beneficial vitamins during the long cold dark winters……… wonderful on toast! Whole berries give just the right amount of "tang". Only the best Scottish variety berries used - "Ben Connan", "Ben Sarek" etc
Summer Berries Jam - a taste of summer in a jar…! A mouth watering combination of strawberries, raspberries, blackcurrants and blueberries (from local growers).
Scottish Recipe Marmalade - Seville oranges have been used to make Scottish marmalade since the days of Mary Queen of Scots - indeed, she is credited with introducing them to us! This is a family recipe using the whole oranges - flesh and peel - roughly chopped to give that all important "bite" and "tang" - just the thing to waken up the taste buds in the morning!
HEDGEROW JELLIES - 190ml jars
Rowan and Apple jelly - using the best of locally grown and available ingredients. Both the rowans and apples are from our own croft. Bright red tangy preserve which can be served as it is on toast or, traditionally, served with venison or game dishes. I like it with smoked cheese. Redcurrant jelly - wonderfully versatile preserve to be used on its own, to enhance meats and game as well as to add to sauces and gravy.
CHUTNEYS - (made in small batches so flavours will vary slightly from batch to batch)
Spicy Plum - using the best "Victoria"s grown on Skye with added "spice" giving this a warming, cinnamon-based, fruity flavour - great with cheese, meats or poultry. Crofter's chutney - a medley of marrow and apples with added apricots and sultanas for sweetness and with chilli and ginger to warm up the winter nights.... delicious with ham, lamb, chicken, cheese or even on its own..! Fruity Mango chutney - OK, so mangoes don't grow on Skye ..... but this is a taste of the exotic - and much warmer - east! You can actually taste the mangoes - with added apples and apricots and even ginger bits. Don't save it just for curries......adds a "zing" to chicken or ham sandwiches - hot or cold. Apple chutney - using the wonderful harvest of apples from my own garden with onions and eastern spices to give a light fruity but spicy taste - good with pork, ham or farmhouse cheese. A variety of other chutneys available in small batches from time to time - contact us for details or take "pot luck"! SEASONAL XMAS SPECIALS (limited stocks) - (size 190ml jar) - £4.00/jar Whisky Marmalade with Islay single Malt - tangy, chunky, orange conserve with a very warming and generous addition of rare "Caol Ila" single malt whisky. Strawberry and Champagne Conserve - sweet, whole strawberries with an explosion of bubbles....! Cranberry and Red Onion relish - sweet and sour, laced with port and red wine to spice up casseroles as well as ham or any cold turkey! Blackberry and Sloe Gin jelly - ideal for toasted crumpets by the fire or livening up roast meats - especially venison or lamb.
